DATE NIGHT: So Mike and I have a little weekly ritual that is really quite nice. People are so shocked that we carve out time for this, but I guess I'm shocked that others don't. Many of you know but due to my Celiac's I have to be so careful when I go out to eat that frankly....it's not that much fun. I love to get creative in the kitchen, purchase really fresh local foods, and on Friday evenings-that's what we do. We call it "date night". During the week we look for fun things to make together and then rally in the kitchen. On occasion a glass of wine might be shared, but more often than not, we just cook and and hang out. This last week we made this recipe-we agreed one of our top three favorites.
It's part of the way we connect with each other, with our food, and with our value of unplugging and taking things slow. I encourage you all to give it a go....
Ground Lamb, all spice, salt, pepper, garlic. Smoosch into meatballs and cook in the over, 350 for about 25 minutes. Simple
4 figs dried and sliced, some balsamic ( I think about 1/2 cup), some fresh rosemary, Reduce to preferred thickness.
Serve and enjoy! We found with 1 pound of meat we each had 4 meatballs and leftovers.
